Light acidity, medium body with light citrus notes. Cups best at a medium roast. Most Peru coffees are relatively unheard of simply because of the competition with the Brazilian and Colombian markets. These coffees should not be overlooked or underappreciated. Peruvian importers and exporters have worked hard to get the farms and mills up to organic standards and these high altitude beans are worth a shot. Comes with roasting instructions.

Frought with a history of civil war, Rwanda is arriving in the specialty coffee industry with a great cupping coffee. Situated near Lake Kivu, these beans are grown in high altitude, volcanic soils. As with Kenya, and other East African coffees, this Rwanda has a good body and a classic clean taste. I enjoy this cup at any time of the day, it is smooth with hints of sweetness, citrus tones and winey acidity. Full City or Vienna roast is a good starting point for this coffee. 5lbs come in plastic bag with roasting instructions.

Grown by Members of the POSI Cooperative who live in 23 communities in Motoziotla and Siltepec in Chiapas, Mexico. Strictly high grown at altitudes between 1200 and 1800 feet and wet processed. This coffee has a full, rich flavor with a bit of sweetness like a premium Hawaiian or Guatemalan coffee. Best for a Light to French roast, as some of the more delicate bright notes are lost in a darker roast, but it does roast well to the darker stages. We are committed to providing only Fair Trade certified green coffee. Purchasing Fair Trade guarantees the growers were paid a fair and living wage for the coffee they labored to produce. All of the green coffee we sell was purchased in small lots of only the best quality arabica beans. This green coffee must be roasted before it can be made into a coffee beverage. We recommend roasting with a home coffee roasting appliance such as the FreshRoast Plus, also available from Seven Bridges Cooperative.
