Christopher Columbus, father of Stubb, was a Baptist preacher to a wide community of African Americans in the early 1900's. He based his morning ministry from their home on Navasota, Texas and moved around the region each weekend to set up an ''arbor bench'' church for folks to come worship the Lord on Sunday afternoons. The men would dig pits in the ground Sunday morning to get meats ready to cook while the women prepared the casseroles and vegetables for the congregation to enjoy after the preaching and singing was over. Now you too can set the right tone to your morning with a Texas-style Gospel Brunch. Stubb's Gospel Brunch Combo includes a 7-9 lb. fully-cooked Bone-In Spiral Sliced Ham, sweet-glazed with sugar, spices and honey, 2 lbs. of zesty Beef and Pork Sausage Links and Old-Fashioned Pancake Mix for fluffy golden brown hotcakes. This story defines the early historical beginnings of Americas first gospel brunches and is a part of Stubb's deep history of bringing people, food, music and good times together. It's a wholesome meal for the whole family. Simply reheat the meat and fry the pancakes however you like them.

Stubb had hundreds of good, close friends. But most would agree that one of his closest was Texas music icon, Joe Ely. Stubb met Joe sometime during the seventies and Joe was one of the first musicians to play live music at Stubb's restaurant in Lubbock. Through the years, Joe was as responsible as anyone in making the Stubb's name legendary. One Christmas in the late 80's, Stubb, Joe, his wife Sharon, and another Texas music great, Kimmie Rhodes produced the first label bottled batch of Stubb's Legendary Sauce in the kitchen of the Ely household. Later, when Stubb's relocated his restaurant to Austin and needed a big act to headline the grand opening, Stubb's naturally turned to his best friend Joe. That's right, even though he was an International star touring with the Rolling Stones, The Clash and Bruce Springsteen; it was Joe Ely who took the stage to christen the new establishment. Even to this day, Joe is still working to promote and honor his close friend. He's producing a feature length documentary chronicling Stubbs's life to be finished in Spring 2009. In honor of these two great friends, try this combo.
